Blueberry Oatmeal Griddle Cakes

Ingredients:

1 cup whole wheat flour

1 cup rolled oats

1 tablespoon brown sugar

1/2 teaspoon cinnamon

pinch of nutmeg

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 tablespoon vegetable oil

1 1/2 cups soy, rice or almond milk

1 tablespoon lemon juice

1/2 cup muddled blueberries

Combine all ingredients in a large mixing bowl and stir until smooth. Preheat griddle or pan on medium heat and spray with cooking spray. Ladle mixture onto heated service and flip when griddle cake starts to bubble. Cook until golden brown. Enjoy :)
