Chilled Cucumber Avocado Soup

Ingredients:
2 ripe, peeled avocados
4 cucumbers, peeled and seeded 
2 scallion stalks, whites only
1/4 cup lemon, lime juice mixture
2 cups cold water
1 cup unsweetened almond milk
2 minced garlic cloves
1 tablespoon fresh dill, finely chopped 
1 tablespoon chopped basil
1 teaspoon  sea salt



Combine all ingredients in blender until smooth. Add more water if consistency is too thick. Place in refrigerator for an hour. Garnish with toasted pine nuts or fresh basil.
