Sweet Potato Curry Soup

This soup will keep you full and warm on an autumn day :)

Sweet Potato Curry Soup:

3 lb. sweet potatoes, peeled and cut
4 1/2 cups organic vegetable broth
1 can light coconut milk
1/2 cup red lentils
1 red apple, peeled and cut
1 tsp. nutmeg
1 tsp. ground ginger
1 tsp. onion powder
1 tbsp. curry powder

Directions

Put all ingredients into a large soup pot and bring to a medium boil. Cook on medium until the apples and sweet potatoes and lentils are soft. Using a hand blender, blend until the soup is smooth. Serve with Whole grain toast points and enjoy.
