Berry Buckwheat Griddle Cakes.

Best breakfast ever!

1/2 cup buckwheat flour

1/2 cup quinoa flour

3/4 tsp baking powder

1/4 tsp baking soda

1 cup vanilla almond or rice milk

1 tbsp coconut oil

1 tbsp egg substitute

1 large handful of muddled fresh berries (whatever is in season)

1 tsp. lemon zest

Mix all ingredients in mixing bowl and stir until smooth. Cook griddle cakes over lightly oiled skillet.

Coconut Cranberry No Bake Cookies

1 1/2 cup dates

1/2 cup dried cranberries

1/2 cup almonds

1/2 cup shredded coconut

1/2 cup shredded almonds

1/2 crushed pecans

2 tbsp orange zest

1 tbsp almond extract

Mix all ingredients in mixing bowl with hands. Roll into small balls and ENJOY!!!

Walnut Pesto

Ingredients

1/4 cup chopped walnuts

2 handfuls fresh basil

1 handful baby arugula

5 tbsp extra virgin olive oil

1 pinch of sea salt and course black pepper

Add all dry ingredients in a food processor and finely chop. Slowly add olive oil while pulsing the mixture. This pesto is excellent over spelt pasta or even used as a dip for crackers and veggies. Happy Holidays!

Mega Green Salad

Ingredients:

1 cup spinach
1 cup arugula
1/4 cup dulse flakes
1/2 diced cucumber
1/2 cup sprouts
1 small diced avocado
1 tbsp. black sesame seeds
1 tbsp. sesame oil
pinch of sea salt and pepper.

toss gently and serve.
